Baked Salmon Bites

These Baked Salmon Bites are your new secret weapon. They're crispy on the outside, tender on the inside, and have just enough flavor to make them exciting without scaring off picky eaters. Plus, they're bite-sized and fun to eat.

Ingredients

  • 1 ¼ pounds skinless salmon filet
  • 1 ½ cups panko bread crumbs
  • 2 tablespoons dried parsley
  • 2 tablespoons honey
  • 2 ½ tablespoons olive oil
  • 1 tablespoons dijon mustard
  • 1 teaspoon salt
  • 6 ounces 2% Greek yogurt
  • ½ juice lemon

Instructions

  • Preheat the oven to 400°F on the convection setting, or preheat the air fryer to 375°F.
  • Cut the skinless salmon into small 1½-inch pieces.
  • In a medium-sized bowl, combine the breadcrumbs, parsley, 1 tablespoon of honey, olive oil, mustard, and ½ teaspoon of salt.
  • In another medium-sized bowl, mix the remaining ½ teaspoon of salt, the remaining 1 tablespoon of honey, the Greek yogurt, and the lemon juice. Coat each piece of salmon first in the yogurt mixture, then in the breadcrumb mixture.
  • For baking, line a large baking sheet with a baking rack, place the salmon bites on the rack, and bake at 400°F for 15 minutes.
  • For air frying, place the salmon bites on the air fryer rack and cook at 375°F for 12 minutes.
