BUFFALO CHICKEN LETTUCE WRAP

This Buffalo Chicken Lettuce Wrap is proof that simple ingredients can still bring big energy to the dinner table. Creamy buffalo chicken gets tucked into crisp iceberg lettuce, finished with blue cheese dressing, scallions, and a crunchy Dorito surprise that makes each bite addictive. Ingredients

Buffalo Chicken Ingredients

  • 1 cup low-fat Greek yogurt
  • 2 tbsp Ranch seasoning
  • 1 tsp fresh lemon juice
  • 3 tbsp Franks Red Hot
  • cups rotisserie chicken shredded

Everything Else

  • 6 whole iceberg lettuce leaves
  • cup blue cheese dressing
  • 1 bundle of scallions sliced thin
  • 24 Cool Ranch Dorito chips

Instructions

  • Add the first 4 Buffalo chicken ingredients to a medium-sized bowl and mix well. Add the shredded chicken to the bowl, toss to combine, and set aside.
  • Place the lettuce leaf on top of a 10x10 piece of parchment paper.
  • Fill each lettuce leaf with 3 tbsp of Buffalo chicken, a tablespoon of blue cheese dressing, a sprinkle of scallions, and 4 crushed Dorito chips.
  • Wrap the lettuce around the filling as you would a burrito, then snugly wrap the lettuce "burrito" with parchment paper.
