High-Protein Deviled Egg Pasta Salad

This High Protein Deviled Egg Pasta Salad takes everything you love about classic deviled eggs and turns it into a shareable, fork-friendly pasta salad. The "dressing" is a blend of cottage cheese, Greek yogurt, and just enough mayo to keep things creamy without going overboard. You get all that signature deviled egg flavor (the Dijon, the paprika, the pickle juice) with a fraction of the fat and calories. It's meal-prep gold and cookout-ready.

Ingredients

  • 1 lb rotini pasta dry
  • 1 tbsp extra virgin olive oil
  • 10 hard-boiled eggs peeled
  • cup low-fat cottage cheese
  • cup low-fat Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tsp rice wine vinegar
  • 3 tbsp pickle juice
  • 1 tsp Dijon mustard
  • 1 tsp kosher salt
  • ¼ tsp paprika
  • Pepper to taste
  • 2 tbsp low-fat milk
  • 2 cups dill pickles diced
  • 1 bundle scallion sliced thin
  • 3 tbsp dill roughly chopped

Instructions

  • Cook the pasta al dente, strain, add olive oil, toss, and set aside.
  • Grab the hard-boiled eggs and separate the whites from the yolks. Roughly chop the egg whites and set the whites aside.
  • Make the deviled egg "dressing". To a blender, add the cooked egg yolks, cottage cheese, yogurt, mayonnaise, vinegar, pickle juice, mustard, salt, paprika, pepper, and milk. Blend until smooth and creamy.
  • To a serving dish, add the cooked pasta, pickles, scallions, dill, chopped egg whites, and devilled egg “dressing” you just blended. Toss and serve!
