Everything Bagel Salmon Salad

Everything Bagel Salmon Salad takes everything we love about a classic bagel-and-lox situation and transforms it into a vibrant, crowd-friendly salad. Flaky roasted salmon is coated in Everything But the Bagel seasoning, then layered over crisp romaine and red leaf lettuce with cucumbers, tomatoes, scallions, and soft-boiled eggs.

Ingredients

For the Dill Cream Cheese Dressing

  • ¼ cup cream cheese
  • cup sour cream
  • 2 tbsp mayonnaise
  • cup milk
  • 1 tbsp extra virgin olive oil
  • ½ shallot minced
  • ½ tsp dijon mustard
  • 1 tbsp lemon juice
  • ½ tsp kosher salt
  • 3 tbsp fresh dill finely chopped

For the Everything Bagel Croutons

  • 2 everything bagels cut into 1-inch pieces
  • 2 tbsp olive oil

For the Salad

  • 12 ounces fresh salmon
  • 3 tbsp Everything But the Bagel seasoning
  • 2 romaine hearts shredded
  • 1 red leaf lettuce heart shredded
  • 1 bundle scallions sliced thin
  • 1 pint grape tomatoes cut in half
  • ½ cucumber sliced thin
  • 3 soft-boiled eggs cut in half
  • 3 tbsp dill fronds for garnish
  • 3 tbsp pickled red onions optional

Instructions

  • Preheat the oven to 375°F. Add all of the Dill Cream Cheese dressing ingredients except for the dill to a blender and blend until creamy. Mix in the chopped dill and set aside.
  • Place the croutons onto a parchment-lined baking sheet. Drizzle with olive oil, toss to coat, and bake for 10-15 minutes or until golden brown. Remove from oven and set aside.
  • Place the salmon onto a parchment-lined baking sheet. Then coat the filets with approximately 3 tbsp of the Dill Cream Cheese Dressing.
  • Sprinkle the Everything But The Bagel seasoning over the salmon and bake for 12-14 minutes, or until the salmon reaches an internal temperature somewhere between 125°F-135°F, depending on how you like your salmon cooked. Let cool and then use a fork to flake the salmon into chunks
  • Add all the remaining ingredients to a large shallow bowl. Top with the croutons, flaked salmon, cream cheese dressing, and garnish with extra dill fronds.
  • Toss just before serving.
  • To make a slightly jammy boiled egg, bring a pot of water to boil. Once the water is boiling, lower the eggs into the boiling water and let them cook for 7 minutes. Next, remove the eggs and transfer them to an ice bath (a bowl filled with ice and water). This will stop the eggs from continuing to cook.

To make a slightly jammy boiled egg, bring a pot of water to a boil. Once the water is boiling, gently lower the eggs into the boiling water and let them cook for 7 minutes. After 7 minutes, remove the eggs from the boiling water and transfer them to an ice bath (a bowl filled with ice and water). This will stop the eggs from continuing to cook. Let cool, peel, and slice in half.
