Greek Salad Lettuce Wrap

This low-carb, high-protein Greek Salad Lettuce Wrap is light, protein-packed, and incredibly satisfying. Seasoned ground turkey, cool lemony yogurt sauce, salty feta, crisp cucumber, juicy tomatoes, and crunchy pita chips are all wrapped up in cold iceberg lettuce. It is fresh, filling, and perfect for lunch or dinner when you want something clean but still crave real flavor.

Ingredients

Turkey Filing Ingredients

  • ½ lb ground turkey
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • ½ tsp Aleppo ground (optional)
  • ½ tsp salt
  • ¼ cup tbsp fresh chopped parsley

Lemon-Yogurt ingredients

  • ½ cup low-fat Greek yogurt
  • 1 garlic clove grated
  • ½ lemon juiced

Everything Else

  • 6 whole iceberg lettuce leaves
  • 5 ounces feta crumbled
  • ¾ cup pita chips crumbled
  • 1 cucumber shaved thin
  • 2 plum tomatoes sliced

Instructions

  • Add the ground turkey to a skillet. Season with garlic powder, onion powder, paprika, Aleppo, and salt. Cook over medium-high heat, breaking down the meat as it cooks. Cook until all the meat is cooked through, then remove from the heat and set aside.
  • Add all of the Lemon-Yogurt ingredients to a bowl and mix well.
  • Place the lettuce leaf on top of a 10 by 10 piece of parchment paper.
  • Fill each lettuce leaf with some of the seasoned ground turkey, yogurt sauce, feta, crushed pita, cucumber, and sliced tomato.
  • Wrap the lettuce around the filling as you would a burrito, then wrap the lettuce "burrito" with parchment paper.
