🍲 Ingredients

The ingredients in Sausage & Kale Pasta are simple, but each one has a job. Together they create a pasta that’s savory, creamy, and full of texture, with enough greens and beans to earn its complete-meal status.

🍝 Orecchiette: These little “ears” are made for catching crumbles of sausage, creamy bean sauce, and bits of kale. If you can find orecchiette, use it. The shape makes a difference here.

🥬 Lacinato kale: Also called Tuscan or dinosaur kale, it has a slightly sweeter, more tender texture than curly kale. One blanched leaf goes into the sauce, while the rest wilts right into the skillet.

🫘 Cannellini beans: One can stays whole for texture and extra fiber, while the other gets blended into a velvety sauce. This is the trick that makes Sausage & Kale Pasta creamy without relying on heavy cream.

🌭 Mild pork or chicken sausage: Either works beautifully. Pork sausage brings a little more richness, while chicken sausage keeps things lighter. Just make sure it’s uncased so you can brown it into bite-size crumbles.

🧀 Parmigiano Reggiano: Freshly grated Parmigiano adds salty, nutty flavor and helps pull the sauce together. This is one of those moments when the real thing pays off.

Cook the pasta and soften one kale leaf. Bring a large pot of well-salted water to a boil and cook the orecchiette until al dente. While it cooks, dunk one kale leaf into the boiling water a few times until it relaxes and loses its toughness. Before draining the pasta, reserve a full cup of that starchy water. Trust me, you’ll be glad you did.

Make the creamy bean sauce. Blend one can of cannellini beans with the softened part of that kale leaf, a little pasta water, and salt. It’ll turn into a smooth, pale-green sauce that looks almost too virtuous to taste this good.

Brown the sausage. Add the uncased sausage to a deep skillet and break it into small crumbles as it cooks. Once it’s fully browned, stir in the butter and garlic. Give the garlic a few minutes to turn golden and fragrant, which means the base of your Sausage & Kale Pasta is officially doing its job.

Build the skillet sauce. Pour in the vermouth or white wine and let it bubble until the alcohol aroma cooks off. Add the chicken broth and torn kale, then simmer until the leaves soften but still have some personality. Nobody wants gray, defeated kale.

Ingredients 

  • 1 lb orecchiette
  • 1 bundle of lacinato Kale
  • 2 cans of cannellini beans, strained
  • 1 tsp kosher salt
  • Pepper to taste
  • 1 lb mild pork or chicken sausage, uncased
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • ⅓ cup sweet vermouth or white wine
  • ⅓ cup chicken broth
  • ⅓ cup grated Parmigiano Reggiano

Instructions 

  • Bring a large pot of salted water to a boil. Add the pasta and follow the package instructions to cook al dente.
  • As the pasta cooks, dip one of the kale leaves into the boiling water several times until it has lost its toughness, then set aside. Once the pasta is done, reserve 1⅓ cup of pasta water, strain and set the pasta aside.
  • Remove the veins from the remaining kale leaves and roughly chop or tear them.
  • In a blender, blend one can of beans, the leafy portion of the steamed kale leaf, ⅓ cup pasta water, and ½ tsp salt until smooth, then set aside.
  • To a large deep skillet, add the uncased sausage. Cook over medium heat, breaking it apart as it cooks. Once the sausage is fully cooked, add the butter, garlic, and cook until the garlic is golden brown, about 3 minutes.
  • Add the sweet vermouth and cook for 3 minutes or until the smell of alcohol has disappeared. Next, add the chicken broth and torn kale leaves. Bring to a high simmer and let cook for 3 minutes, stirring occasionally.
  • Add the remaining beans, pasta, salt, reserved pasta water, blended beans and greens, and grated Parmigiano Reggiano. Stir, taste, adjust for salt, and serve warm.
