🍲 Ingredients

The ingredient list for Maple Dijon Sheet Pan Chicken leans into sweet, savory, tangy, and smoky fall flavors. Nothing is fussy, but every ingredient has a job.

🥓 Thick-cut bacon: Five slices add smoky flavor and a crisp finish. I bake it first, then scatter the chopped pieces over the finished chicken so they stay crunchy.

🍁 Maple syrup and brown sugar: These give the sauce its unmistakable fall sweetness and help the chicken, squash, and onions caramelize in the oven.

🧈 Melted butter: Two tablespoons add richness and help the sauce coat every piece of chicken and produce.

🥄 Dijon mustard: Two tablespoons bring tang and just enough sharpness to keep the maple sauce from tasting overly sweet.

🍶 Rice wine vinegar: One tablespoon brightens the sauce and balances the bacon, butter, and brown sugar.

🧂 Kosher salt and black pepper: Salt wakes up every flavor in the pan, while black pepper adds a little bite. Season the sauce first, then use the remaining salt and pepper over the chicken and vegetables.

🎃 Delicata squash: Its tender skin is completely edible, so there’s no peeling required (score!). Thin slices roast quickly and add sweetness, fiber, and those golden edges everyone fights over.

🧅 Yellow onion: Thinly sliced onion softens and caramelizes in the maple-Dijon sauce, bringing savory depth to all that fall sweetness.

🍎 Apple: The apple turns tender in the oven while keeping a little texture. Choose a firm variety such as Honeycrisp, Pink Lady, or Granny Smith so the slices don’t disappear into the pan.

🍗 Boneless, skinless chicken thighs: Eight thighs make this dinner protein-packed and weeknight-friendly. Thighs stay juicy under the sweet sauce and handle the final blast of heat beautifully.

🧀 Blue cheese: Five ounces of crumbled blue cheese add a salty, tangy finish that cuts through the maple glaze. Don’t skip it unless blue cheese genuinely isn’t your thing.

🌱 Scallions: One thinly sliced bundle brings fresh onion flavor and a pop of green to the finished Maple Dijon Sheet Pan Chicken.

👩‍🍳 How to Make Maple Dijon Sheet Pan Chicken

Bake the bacon. Start the bacon on a parchment-lined sheet pan in a 400°F oven. Once it’s crisp, let it cool and chop it into small pieces. Try not to snack on all of it before dinner. That’s the hardest step.

Mix the maple-Dijon sauce. Whisk the maple syrup, brown sugar, melted butter, Dijon mustard, rice wine vinegar, and a little kosher salt until smooth. It should taste sweet first, then tangy, with enough salt to pull everything together.

Load the sheet pan. Arrange the sliced delicata squash, onion, apple, and chicken thighs on a large parchment-lined baking sheet. Pour the sauce over everything and toss well so every piece gets coated. Use your hands. They’re the best tool for this job.

Roast, then broil. Roast the Maple Dijon Sheet Pan Chicken on the top rack until the thighs are cooked through and the produce is tender. Finish it under the broiler for a few minutes so the chicken turns golden and the edges of the squash and onion get lightly charred. Keep an eye on it because maple goes from caramelized to burnt quickly.

Finish the pan. Check that the chicken has reached 165°F in the thickest part, then top everything with the crispy bacon, crumbled blue cheese, and sliced scallions. Serve it warm while those sweet, salty, smoky flavors are doing their best work.

🪄 Tips and Tricks

  • Slice the squash, onion, and apple to a similar thickness so they finish roasting at the same time.
  • Use a large sheet pan and give everything room. An overcrowded pan steams instead of caramelizing.
  • Cut the apple just before assembling the pan so it doesn’t have time to brown.
  • Watch the broiler closely because the maple and brown sugar can darken fast.
  • Check the thickest chicken thigh with an instant-read thermometer and make sure it reaches 165°F.

🗒 Variations & Substitutions

Maple Dijon Sheet Pan Chicken is easy to adjust, but keep a mix of sweetness, acidity, and something salty on top so the flavors stay balanced.

A smiling woman in a modern kitchen wears a stylish maroon apron, holding a drink garnished with herbs. Text reads Your Apron. Your Style. The Byereka logo is in the lower right corner.
  • Swap boneless chicken breasts for the thighs, cutting large breasts into even pieces and cooking them to 165°F.
  • Use butternut squash or sweet potato in place of delicata squash. Peel them first and cut them into small, even pieces so they cook through.
  • Choose a tart Granny Smith apple for more contrast or a Honeycrisp apple for extra sweetness.
  • Swap the blue cheese for goat cheese or feta if you want a milder tang.
  • Leave off the bacon and add toasted pecans for a meatless crunchy topping, while keeping the chicken as the main protein.
  • Use dairy-free butter and skip the cheese for a dairy-free version.

Best served with

  • A peppery arugula salad with lemon vinaigrette to balance the sweet maple sauce.
  • Brown rice, farro, or quinoa when you want to stretch the meal and catch every drop of sauce.
  • Roasted Brussels sprouts for even more fall flavor and fiber.
  • Crusty bread for swiping through the maple-Dijon juices on the pan.

👝 How to Store Leftovers

Let the Maple Dijon Sheet Pan Chicken cool, then transfer the chicken, vegetables, apples, and toppings to an airtight container. Refrigerate for 3 to 4 days. For the best texture, reheat the chicken and roasted produce on a sheet pan at 350°F until warmed through, then add a few fresh scallions after reheating. I don’t recommend freezing the fully assembled dish because the roasted apple and blue cheese won’t come back with their best texture.

👝 How to Reuse Leftovers

Chop leftover Maple Dijon Sheet Pan Chicken and pile it over arugula for a fast lunch salad, using the pan juices as the start of a dressing. You can also tuck the chicken, squash, apple, and onion into a warm wrap, or spoon everything over farro or brown rice for a fall grain bowl. My favorite move is turning it into a skillet hash and topping it with a fried egg. Zero sad leftovers here.

🤔 Common Questions

Do I need to peel delicata squash?

No. Delicata squash has thin, edible skin that becomes tender as it roasts. Scrub the squash well, cut it in half, remove the seeds, and slice it thinly.

Can I use chicken breasts for Maple Dijon Sheet Pan Chicken?

Yes. Cut large boneless, skinless chicken breasts into smaller, even pieces so they cook at the same rate as the vegetables. Use an instant-read thermometer and cook the chicken to 165°F.

What kind of apple works best in this recipe?

Use a firm apple that can hold its shape in the oven. Honeycrisp and Pink Lady add sweetness, while Granny Smith gives the maple sauce a tarter contrast.

Can I prepare Maple Dijon Sheet Pan Chicken ahead of time?

You can cook and chop the bacon, mix the maple-Dijon sauce, and slice the squash and onion up to a day ahead. Refrigerate each component separately, then slice the apple and assemble the sheet pan just before roasting.

How do I keep the maple sauce from burning?

Roast the chicken and vegetables at 400°F as directed, then watch the pan constantly during the final broil. Maple syrup and brown sugar caramelize quickly, so remove the pan as soon as the chicken is golden and the vegetable edges are lightly charred.
